In organic extra virgin olive oil

The European sardine or common sardine (Sardina pilchardus) is a species of clupeiform fish belonging to the Clupeidae family. They are gregarious fish par excellence and travel long distances. Sardines appear on the surface (rising from deeper waters) as the water warms up, starting in the south of the Bay of Biscay (Cantabrian Sea), then moving northwards along the French coast and finally, in summer, to the south of the British Isles, giving the impression of a migration from south to north. They are a fatty and healthy food rich in omega-3 oils. They have the advantage of not needing to be cleaned of their bones and can be served quickly in a tapa, an appetiser, as a filling for a pie, or simply as a sandwich. Once the best specimens have been selected and cooked, the fish is prepared and packaged using traditional techniques. To make our preserves, we use sardines to which we add our specially selected organic extra virgin olive oil, which gives them a unique aroma and flavour.
